Raw Food Day

I cought a huge cold. To get id of it, I decided to take a raw food day and only eating light things. I can feel the detox. This is what I had for dinner:

The recipe I roughly followed can be found here. Instead of the zucchini I used kohlrabi to get spaghetti. It was yummie, especially the nut crust.

Yogi Tea

Nothing better than to start the weekend with a freshly brewed yogi chai.

"Good for the blood, the colon, the nervous system and the bones, and for colds, flu and physical weakness." (A taste of India, Bibiji Inderjit Kaur)

"Black Pepper: Blood purifier
Cardamom: Diggestive Aid
Cloves: nervous system and generate heat in body
Cinnamon: bones
Gingerroot: for colds, flu, physical weakness, digestion, increased potency"

Yogi Tea

  • 2 quarts water
  • 15 whole cloves
  • 20 green cardamom pods (crushed)
  • 20 black peppercorns
  • 3 sticks cinnamon
  • 8 slices gingerroot
  • 1/2 tsp black tea
  • 3 cups (soya) milk
  • Honey or brown sugar (to sweeten)

Bring the water to boil in 3-4 quart pot. Add spices. Cover and boil for 20-30 minutes. Add black tea.
At this point you can let the tea cool, strain it, and refridgerate. Or, add the milk, return to boil, and immediately remove from heat (or else it will boil over). Add sweetener to taste.

Wild Herbs Salad & Flax Pizza Cracker

That's what I had tonight. Salad with wild herbs found at a small river in our area. There's dandelion, nettles, water cress and Aegopodium podagraria (Giersch).

And yesterday I made those yummie flax pizza crackers found here. Somehow I can't stop eating them ;-)

Pizza Flax Crackers

Makes approximately 8 dozen crackers (4 dehydrator trays)

Ingredients:    

  • 1 cup sun-dried tomatoes, soaked 2 hours in a little water to cover    
  • ½ cup water
  • 1 red bell pepper, chopped
  • ¼ cup chopped onion
  • 2 cloves garlic, crushed
  • 1 teaspoon lemon juice
  • 1 teaspoon sea salt
  • 1 teaspoon Italian seasoning
  • ¼ cup chopped fresh basil
  • 2 cups flax seeds, soaked 12 hours in 3 ½ cups water (do not rinse or drain)

Directions:    

  1. Place the sun-dried tomatoes and their soak water in a blender and process to form a paste.    
  2. Place the sun-dried tomato paste, red bell pepper, onion, garlic, lemon juice, Italian seasoning, and sea salt in a blender or food processor.    
  3. Blend or process the vegetable mixture, adding additional water to thin if necessary. Blend until smooth. Add the basil and process until smooth.
  4. Transfer the vegetable mixture to a large mixing bowl, add the soaked flax seeds, and stir well to combine.
  5. Spread 2 cups of batter on a dehydrator sheet lined with Teflex.    
  6. Dehydrate the crackers at 105 degrees for 12 hours.    
  7. Flip the crackers onto mesh sheets, cut into squares, and continue to dehydrate for another 12-24 hours, or until completely dry.    
  8. Allow the crackers to cool completely, then store in glass jars.

Crackers will keep up to 3 months at room temperature, longer if refrigerated or frozen.

Raw Avocado-Cauliflower Soup

Place

  • 1 Avocado
  • 1/4 Cauliflower
  • 1 small garlic toe
  • 1/2 small onion
  • 2 tablespoons oliveoil
  • lemonjuice
  • some sea salt & black pepper
  • and water (depending on how liquid you want to have the soup)

in a food processor and ...rrrzzzzzzt.... you have a soup! Sprinkle with sunflower seeds and maybe some more olive oil and enjoy! (you also can add seaweed flakes and/or yeast flakes and/or pineseeds...)

Ginger Dates

As seen and tasted at the yoga party after our exam. So simple. So delicious. Slice dates open and remove the seed. Fill with fresh thin ginger slices. Enjoy!
(You also can add some butter, mascarpone or something like this between the ginger and dates.)

Tomatoe Soup

You need a bottle of tomatoe juice or mashed tomatoes & water.
Heat the tomatoe juice/tomatoes. Add some minced garlic, a bit aceto balsamico vinegar, salt & pepper.
Spice up with some fresh or dried basil & oregano.

Now you can add either

-a bit of whiped cream
-mozarella sliced into little pieces (i like that a lot because the mozarella becomes like chewing gum in the hot soup :-)
-rice
-fried breadcrumps (croutons)

or all together.

Hmmm. Qick, light and easy.

/Ihr braucht eine Flasche Tomatensaft oder passierte Tomaten & Wasser.
Den Tomatensaft/Tomaten erhitzen. Gepressten Knoblauch, ein bisschen Balsamico Essig, Salz & Pfeffer hinzufügen. Mit frischen oder getrockneten Basilikum & Oregano würzen.
Dann entweder

-bisschen Schlagsahne
-Mozarellawürfe (das mag ich gern, weil der Mozarella in der heissen Suppe wie Kaugummi wird :-)
-Reis
-Gebratene Brotwürfel (Croutons)

oder auch alles zusammen hinzufügen.
Hmm. Leckern, schnell und einfach!

Princess Bread

Dsc04913 Yesterday we had a faery meal...oh no...a princess bread, like my daughter said. We collected small leafs from beech trees and daisies. Then we layered some bread with butter and curd and decorated it with the leafs and blossoms. Truly a faery or princess meal./ Gestern hatten wir ein Feenmahl..oh neine..ein Prinzessinnenbrot, wie meine Tochter befand. Wir sammelten kleine frische Buchenblätter und Gänseblümchen. Dann gab es Brot mit Butter und Quark, was wir mit den Blättern und Blüten verzierten. Wirklich ein Feen- oder Prinzessinnen-Mahl

Wild salad

SalatHeut abends gabs einen leckeren Wildkräutersalat: Spinat, grüner Salat, Brennesseln, Löwenzahn, Pimpinelle, Bärlauch. Dazu Radieschen, Avocado, Käse-Tortellini, Saatenmix (Sonnenblume, Kürbiskern, Pinienkerne) und ein Dressing aus Olivenöl, Himbeeressig (mein absoluter Favourit im Moment!), Salz, Pfeffer und Vata Churma von Brecht (Gewürzmischung zum Ausgleich des Vata Doshas. Auch mein Favourit zum würzen von Salaten). Schön, wenn man den Frühling so schmecken kann :-) Die Wildkräuter sind aus dem Garten meiner Eltern, der Spinat, Salat udn das restliche Gemüse aus unserem wöchentlichen Gemüseabo.

If someone wants to have the salad ingredients in english, just let me know. I was too lazy to look the names up in the dictionary. Basically it's all freshness from the garden of my parents and our weekly organic vegetable box.
